Vegan Cheese Sauce Recipe

I grew up a child of the entertainment industry during the peak of body-dysmorphic diet-culture in the early 2000's with a dad in the restaurant industry whose friends were mostly world-renowned chefs while simultaneously pursuing a career in LA's fashion industry. YEESH! No wonder it took me to my knees to get the "food is medicine/everything in moderation/healthy can be delicious too" memo.

But I will say, my years of indulgent and sophisticated food mixed with my now holistic and healthy approach to eating has liberated the way I eat and brought me to my healthiest body ever. I have never felt more relaxed about food in my life. Mixing my standards for quality, flavor and health, I have transformed some of my favorite "unhealthy" recipes into exquisite, nutrient-rich, plant-based masterpieces (if I do say so myself).

Eating healthy NEVER means deprivation. Eating healthy means eating whole foods, intuitively with the flavors you love. 

Now let's dive into one of my absolute FAVORITES:

For-Everything Vegan Cheese Sauce

This is the best vegan cheese sauce I have EVER HAD. Period. As a cheese-freak, I truly believed I would fail at being a vegan due to the deliciousness that is cheese, but this sauce proved me wrong. When it comes to mac and cheese or a completely vegan nacho queso substitute: say sayonara to anything else.

Also - did I mention this is literally made out of VEGETABLES? Take a freakin' look:

Ingredients

  •  2 cups potatoes, peeled and diced
  •  1 cup carrots, peeled and diced
  •  1/2 cup water
  •  1/2 cup nutritional yeast
  •  1/3 cup extra virgin olive oil
  •  1 tbsp lemon juice
  •  1 tsp salt
  •  1/2 tsp garlic powder
  •  1/2 tsp onion powder

Instructions

Boil the diced potatoes and diced carrots for 20 minutes, drain and, then add all ingredients to a high power blender. Serve however you'd like. Ideas below!

 

Ideas

  • Drizzle over chips for nachos or dip for queso
  • Drench some elbow noodles for healthy mac and cheese (I love adding cauliflower too)
  • Add to a bean burrito for a cheesy effect
  • Dip veggies, bread or whatever sounds good!
